When I first tried a broccoli salad I was at a friends BBQ. With one bite, I was an instant fan. Broccoli is one of my favorite veggies. Bacon lends a smokiness to the dish while the Craisins give it a little pop of sweet. I mean come on, bacon makes everything better right?
I tend to buy broccoli on a normal basis and I am always looking for a different way to serve it up. Since we are working on making better and healthy food choices, veggies are a staple to keep on hand. While picking up a few items at the grocery store the other day I received a huge compliment. While in the produce department I was just walking around and grabbing a bunch of fruits and veggies and loading them into the cart. The guy putting up produce had to step aside for a moment to let me grab a cucumber and he said he was admiring my cart. I politely thanked him and told him my husband had a heart attack in December and that we were trying to eat better. His statement to me was, "he is so lucky to have you!" What a powerful statement from a perfect stranger. So as I continued shopping, I couldn't help but to smile.
1 head of broccoli
½ cup of Craisins
1/3 cup of chopped red onion (this can be overpowering, use
less if you prefer)
6 slices of bacon, chopped and cooked (I used turkey bacon)
1 cup of mayonnaise
¼ cup of sugar
2 Tablespoons apple cider vinegar
1/2 cup of chopped nuts (I used pecans)
Cut up broccoli into bite size florets. Mix together
mayonnaise, sugar, and vinegar. Just before serving mix dressing with remaining
ingredients.
